Kokum Extract


6-8 pieces black kokum

1/3 cup water

1 medium coconut grated

2 tbsp ghee

1 tsp cumin seeds

2 green chillies, slit and halved

1 clove garlic (optional)

5-6 curry leaves

2 tbsp coriander, finely chopped

Salt to taste

2 tsp sugar


1. Wash and soak kokum in one-third cup of water for ten minutes. Soak coconut in one cup of water for half an hour. Extract milk by liquidizing and straining.

2. Heat ghee in a saucepan, add cumin seeds, chillies, garlic (if using) and curry leaves. When the seeds splutter, add the kokurn, coconut milk, coriander, salt, sugar and one cup of water.

3. Very gently bring the mixture to lukewarm temperature. Discard the kokum before serving. You may also serve this at room temperature with rice, or as a drink during a meal.
