Diamond Shaped Almond Sweet


2 cups almonds

3/4 cup sugar

1/2 tsp cardamom powder

A few strands saffron

2-3 thin silver foil sheets

1 tbsp ghee


1. Soak almonds in hot water for ten minutes. Remove and peel. Pat them dry. Grind to a fine powder.

2. Place sugar in a thick vessel and add enough water to cover the surface. Boil on high flame till it forms two to three strings. Add cardamom powder and saffron, after mixing it with a little water. Add almond powder and continue mixing.

3. When the sugar and almond have mixed properly, remove from heat (approx. two to three minutes). Apply ghee on the counter or the work surface. Pour the mixture on it. Start rolling to get the required thickness.

4. Even out the mixture and press silver foil to cover. Cut diagonally to make diamond shapes. Let it cool to room temperature. Remove with sharp, flat spoon. Store it in an airtight box.
