Bajri-Methi Na Thepla
Millet and Fenugreek Bread
INGREDIENTS
1 cup wheat flour
1 cup millet flour
1 tsp coriander powder
1 tsp cumin powder
1 cup fresh fenugreek leaves
2 tbsp oil
2 tsp jaggery
Sour yogurt to bind the dough
Salt to taste
Oil for shallow frying
1/4 tsp turmeric powder
1 tsp chilli powder
1 tsp ginger-chilli paste
METHOD
1. Mix both kinds of flour with all the dry spices, fenugreek leaves and two tablespoons of oil. Bind into a semi-soft dough with the help of yogurt. Do not add water.
2. Divide the dough into twelve to fourteen balls. Roll out thinly into 4-5 inch wide circles. Shallow fry the theplas over medium flame, using a little oil. Pour oil with a small spoon around the edge of the thepla.
3. Turn over and repeat the process. Serve hot with vegetable, chunda, raita or as a teatime snack.
