Batata Ni Kachri Nu Shaak
Vegetable of Potato Chips
INGREDIENTS
1 kg large potatoes
3 tbsp oil
1 tsp mustard seeds
2 tbsp sesame seeds
6-8 peppercorns
1/4 tsp asafoetida
3-4 dried round red chillies
Curry leaves, finely-chopped
2-3 tbsp cashew nuts, broken into pieces
2-3 tbsp raisins
1/2 tsp turmeric powder
1 tsp chilli powder
1 tsp dried mango powder
Salt to taste
Sugar to taste
Oil for deep-frying
To Garnish
Coriander, finely-chopped
METHOD
1. Cut potatoes into thin chips and soak them in cold, salted water for half an hour. Drain and place them on a thick cloth to dry. Fry them in hot oil till crisp and set aside.
2. Heat three tablespoons of oil in a wide pan and add mustard and sesame seeds.
3. When they splutter, add peppercorn, asafoetida, round chillies and curry leaves. Fry for half a minute, add cashew nuts and raisins and fry again.
4. Add fried potatoes along with turmeric powder, chilli powder, mango powder, salt and sugar to taste. Mix thoroughly. Garnish with coriander leaves and serve with hot puris.
