Bhaji Na Muthia

Green Vegetable Dumplings

INGREDIENTS

1 cup wheat flour

1/2 cup dark millet flour

1/2 cup white millet flour

1 tbsp semolina

1 tbsp gram flour

2 cups fenugreek

2 cups spinach leaves

2 tbsp ginger-chilli paste

2 tbsp oil

2 tbsp yogurt

1 tsp sugar

1 tsp sesame seeds

1 tsp salt

A pinch of baking soda

For Tempering

1-2 tbsp oil

1/2 tsp mustard seeds

1/2 tsp sesame seeds

1/2 tsp asafoetida

A few curry leaves

To Garnish

Grated fresh coconut and chopped coriander leaves

To Serve

Green chutney

METHOD

1. In a large bowl, mix the different kinds of flour. Add the remaining ingredients and bind together to make a very soft dough.

2. Divide this into two or three parts and form cylindrical shapes. Place them in a greased steamer tray with holes. Cover and steam for thirty minutes.

3. Remove and set aside to cool. Cut them into half inch slices.

4. Heat oil in a frying pan for tempering. Add mustard and sesame seeds; when they splutter, add asafoetida and curry leaves.

5. Arrange sliced dumplings over the tempering and heat them through. Turn over and cook the other side as well.

6. Remove to a serving plate, garnish with coconut-coriander and serve hot with green chutney.

Serve 6
