French Beans in Yogurt
INGREDIENTS
1/2 kg French beans, cleaned and cut into 1 cm pieces
A pinch baking soda
3 tbsp oil
1/2 tsp mustard seeds
1/4 tsp asafoetida
2-3 green chillies
1/2 tsp chilli powder
Salt to taste
2 tbsp coriander, finely chopped
1 tsp sugar
2 cups yogurt, beaten
10-12 cashew nuts, halved
A few curry leaves
METHOD
1. Drop chopped French beans in boiling water adding a pinch of soda. Boil for seven to eight minutes. Drain and set aside. Heat two tablespoons of oil in a large frying pan and add mustard seeds.
2. When they splutter, add asafoetida and green chillies. Add boiled French beans, salt and chilli powder. Cook until French beans are completely soft.
3. Let it cool completely. Add salt and sugar to the yogurt and add the cooled French beans. Mix well in a serving bowl.
4. Heat one tablespoon of oil and add cashew nuts and curry leaves. Pour this over the French beans and sprinkle coriander on top and chill for two hours or until ready to serve.
