Dudhi Na Thepla
Bread Made with Bottle Gourd
INGREDIENTS
1 cup wheat flour
1 cup millet flour
1 cup bottle gourd, grated
2 tbsp oil
1/4 tsp turmeric powder
1 tsp chilli powder
1 tsp ginger-chilli paste
1 tsp coriander-cumin powder
A pinch of baking soda
Salt to taste
Sour yogurt to bind the dough
Oil for shallow-frying
METHOD
1. Mix both kinds of flour along with all the dry spices, bottle gourd, two tablespoons of oil and soda. Bind into a semi-soft dough with the help of yogurt. Do not add water.
2. Divide the dough into twelve-fourteen balls. Roll out each one into flat, thin theplas with a rolling pin.
3. Shallow fry the theplas over medium flame, using a little oil. Pour oil with a small spoon around the edge of the thepla. Turn over and repeat the process.
4. When they are cooked remove from heat and serve hot with raita or as a teatime snack.
Note: You could use fenugreek leaves in place of bottle gourd.
