Khaman Kakdi

Cucumber and Coconut Salad

INGREDIENTS

250 gm cucumber, peeled and chopped or grated

3-4 tbsp fresh grated coconut

3-4 tbsp peanuts or gram, coarsely ground

1 tsp sugar

Juice of 1 lemon

Salt to taste

3-4 green chillies, deseeded and chopped

To Garnish

Finely-chopped coriander leaves

METHOD

1. Apply salt to the cucumber and set aside for half an hour. Rinse off the e1/2cess water from the cucumber and place it in a bowl.

2. Add the rest of the ingredients, garnish with coriander and chill until ready to serve.

 

Serves 4-6
