OAT CORN MUFFINS SNACKS FOR DIABETICS

Ingredients (Makes 12 Muffins)

1/2 cup atta

1/2 cup oat bran

1/4 tsp salt

1 tbsp baking powder

1 cup makki ka atta

Pinch of powdered sugar

1 cheese

2/3 cup milk

1/4 tsp green capsico sauce

1/4 cup refined oiI

1/2 capsicum, finely chopped.

425 g corn kernels

1/4 cup fresh coriander, chopped

Preparation

Lightly brush muffins trays with oil. Muffin trays are special ones with holes in them; easily available in the market. You may used tinned corn or fresh ones. Pressure cook fresh ones till soft. Sift the atta, oat bran, salt, baking powder, makki ka atta and sugar together. Combine the cheese, milk, capsico and oil in a separate bowl. Make a bay in the centre of the atta mixture. Add the cheese mixture, corn, capsicum and coriander all at once. Mix the ingredients until just moisture. Do not overbeat; the batter should be quite lumpy. Because the more you stir, the more gluten develops and tougher the muffin becomes. Spoon the batter evenly into the prepared tin. Bake in an oven preheated to 190°C for 30 minutes. Check after 20 minutes, the tops should be nice and brown and a knife inserted in the middle of the muffin should come out clean.
