PANEER AND NOODLES IN TOMATO SAUCE

PANEER & NOODLES IN TOMATO SAUCE

350 grams paneer

1 tablespoon ghee

1 /2 teacups boiled green peas

3 teacups fried noodles

2 tablespoons fried

cashewnuts

1 tablespoon chopped coriander

For the tomato sauce

1 ½ kg. tomatoes

2 to 3 green chillies

2 bay leaves

3 teaspoons sugar (approx.)

1 teaspoon chilli powder

2 teaspoons cornflour

1 tablespoon ghee

salt to taste

A non-spicy colourful paneer dish with noodles.

Preparation time: 15 minutes.

Cooking time: 40 minutes.

Serves 8.

For the tomato sauce

Cut the tomatoes into big pieces, add 1/2 teacup of water and cook. When cooked, take out a thick soup by passing through a sieve.

Heat the ghee in a vessel. Slit the green chillies and fry for 1/2 minute. Add the bay leaves and fry for a few seconds.

Add the tomato soup, sugar, chilli powder and salt.

Mix the corn flour with a little water and add to the soup. Boil for 15 minutes.

How to proceed

Cut the paneer into flat pieces and deep fry in ghee for a few seconds. The paneer pieces should not become brown in colour.

Add the fried paneer and green peas to the tomato sauce and cook for 5 minutes.

Just before serving, add three-quarters of the fried noodles. Put in a serving dish, sprinkle the remaining noodles, cashewnuts and coriander.

Serve hot.
