Puris

Puffed Unleavened Bread

INGREDIENTS

250 gm whole wheat flour, sieved

2 ½ tbsp ghee

1/4 -1/2 cup lukewarm water

Oil for deep-frying

METHOD

1. Place flour in a deep bowl. Make a well in the centre and pour ghee in it. Rub the flour till it starts looking like breadcrumbs. Add three tablespoons of warm water and rub the mixture with your fingertips.

2. Gather all the dough to form a round ball. Cover and set aside for thirty minutes. Divide the dough into twelve to fourteen small balls. Flatten each one and roll out on a lightly floured surface into three to four inch rounds.

3. To fry immerse one puri at a time in hot oil. It will begin to puff up. Press it down gently with the back of a perforated spoon and cook for one minute. Turn it over and cook again for one more minute.

4. Drain on kitchen paper and serve hot with vegetables.

 

Makes 12-14 puris
