Soft Vermicelli Sweet
1 cup cottage cheese, grated
1/2 cup icing sugar, sieved
1 tsp corn flour
1/2 cup fresh fruit of your choice, finely chopped (Pineapple, orange, mango) or chopped mixed dried fruits
250 gm X2 circles Sutarfeni, white or with saffron (readymade)
1/4 cup sugar syrup
A few rose petals and sliced fruits
1. In a medium bowl place cottage cheese, icing sugar and corn flour and mix well. Add finely chopped fruit of your choice to this mi1/2ture.
Now place one of the sutarfeni circles on a lightly greased baking tray and slightly heat in a moderate oven, to make it a little crisp.
2. Remove from oven and let it cool slightly. Place sutarfeni a serving dish and spread cottage cheese mixture over this evenly. Do likewise with the other circle and place that over the cottage cheese mixture.
3. Pour sugar syrup over the sutarfeni, making sure it does not overflow from the sides. Decorate with rose petals and the fruit slices. Cut it into triangles and serve at room temperature or cold.
