Turia-Makai Nu Shaak                 

Ridge Gourd and Corn Vegetable


1 tbsp oil

1/2 tsp cumin seeds

2-3 green chillies, slit

A few curry leaves

500 gm ridge gourd, skinned, slit vertically and cut into 2-inch pieces

A pinch of baking soda.

1/2 cup corn kernels, boiled

2 tbsp green chilli-ginger paste

1 tsp sugar

2 cups thin coconut milk

1 tsp corn flour

1 tbsp tamarind water (optional)

Salt to taste

To Garnish

1 tbsp finely-chopped coriander


1. Heat oil in a heavy saucepan and add cumin seeds, chillies and curry leaves. Add chopped gourd, soda and a little water. Cook till soft.

2. Add boiled corn, chilli-ginger paste, sugar and coconut milk mixed with corn flour and salt to taste.

3. Let the mixture come to a boil and take it off the flame when thick. Add tamarind water (optional).

4. Garnish with coriander leaves and serve hot with roti.

Note: Make sure you don't overboil or the coconut milk will curdle.
