Sprouted Green Gram

INGREDIENTS

1 cup whole green gram

2 tbsp oil

1/2 tsp asafoetida

2 green chillies, slit

2-3 cloves garlic, finely-chopped

1/2 cup coriander leaves, finely chopped

2 tsp ginger-chilli paste

1/2 tsp turmeric powder

Juice of 1/2 lemon

Salt to taste

METHOD

1. Soak gram for eight hours or overnight. Drain, tie in a piece of muslin and place in a covered vessel. The gram will sprout well within twelve hours.

2. Heat oil in a saucepan, add asafoetida, green chillies, garlic and coriander leaves. Fry for one minute. Add ginger-chilli paste and cook further for half a minute. Add sprouted gram along with one cup of water and salt. Cover and cook until tender.

3. Add lemon juice. Cook for five more minutes. Serve hot.
