Vagareli Chaas
Spiced Buttermilk
INGREDIENTS
1 cup yogurt
2 cups water
1 tsp oil
1/4 tsp cumin seeds
1 tbsp curry leaves
1 tbsp coriander leaves, finely-chopped
1 tbsp ginger, finely-chopped
1 tbsp mint leaves, finely-chopped
1 tbsp green chillies, finely-chopped
Salt to taste
METHOD
1. Beat the yogurt with a whisk. Add water and continue beating till smooth. In a tempering vessel, heat oil and add cumin seeds.
2. When they splutter, add curry leaves, coriander, ginger, mint and chillies. Pour this over the beaten yogurt. Add salt to taste. Serve at room temperature or cold.
Makes 4 glasses
