COLOCASIA LEAF PATOO SNACKS FOR DIABETICS

Ingredients (Serves 6)

10 colocasia leaves

11/2 cup gramflour (besan)

1/4 tsp salt

1/2 tsp turmeric powder

1 tsp coriander powder

1 tsp cumin powder

2 tsp sesame seeds

1/2 tsp bicarbonate of soda

Pinch of asafoetida

1 tsp ginger green chilli paste

1 tsp garam masala powder

Pinch of sugar

1 tbsp tamarind juice

1 tbsp refined oil

1 tsp mustard seeds

2 tbsp coriander leaves

2 tbsp grated coconut

Preparation

Remove the thick stems of the colocasia leaves; wash and set aside. Sieve the gramflour with soda and mix with salt, turmeric, coriander and cumin powders, sesame seeds, asafoetida, ginger green chilli paste, sugar and 1 tsp oil. Add the tamarind juice and enough water to gram flour mixture to form a paste. Spread evenly on the back of each leaf. Fold over the two sides and then roll, making sure that the batter does not spill. Place the rolls on a sieve and steam. A dhokla steamer may be used as well. Steam for 45 minutes. Cut the steamed roll into thick pieces.Heat the oil in a non-stick skillet and temper with the mustard seeds. When they crackle lay the rolls side by side and leave on a low heat. After 5-7 minutes flip so the other sides are fried, too. Remove after 5 minutes, garnish with coconut and coriander leaves. Serve hot or cold.

 

Variation: Cabbage leaves may be used as well.
