CURD CHEESE BALLS SNACKS FOR DIABETICS

CURD CHEESE BALLS SNACKS FOR DIABETICS

Ingredients (Makes 36 Balls)

3 cups curd

1 tbsp poppy seeds

1 tbsp sesame seeds

1 tsp cumin seeds

1/2 tbsp coriander seeds

1 tsp chaat masala

A pinch of salt

1 tbsp freshly ground pepper

3-4 tbsp finely chopped toasted nuts

1/3 cup finely chopped fresh coriander leaves

Preparation

To prepare curd cheese, tie the homemade curd (made from skimmed milk) in a muslin cloth and hang for 6-8 hours till all the whey drips off. You may lightly squeeze the bundle a few times to quicken the process. Refrigerate till needed. You can do this 2 days in advance. Dry roast the poppy seeds and sesame seeds separately. Roast the coriander and cumin seeds until fragrant. Crush to a coarse powder. Place the coriander and cumin powder, chaat masala, salt and pepper in a bowl. Add the curd cheese; mix well. Place the poppy seeds, sesame seeds, roasted nuts and fresh coriander leaves on 4 different plates. Divide curd cheese into 4 portions. Using a measuring spoon, scoop up about 1/2 tbsp of curd cheese and drop 9 measured portions on each of the coatings (for a total of 36 balls). Carefully roll the balls in the coating until round and well-coated. Refrigerate until needed.

 

Have this nutritious snack when hunger pang strikes in between meals. They make a very good party snack, too.
