DOUBLE DECKER SANDWICH SNACKS FOR DIABETICS

Ingredients (Makes 4 Sandwiches)

1 cup thick spinach paste

1/4 tsp garlic paste

Salt and pepper to taste

4 hardboiled cheeses

1/2 cup hung curd

12 slices brown bread

Preparation

To make the spinach paste - cook the spinach, leaves only, till wilted. Squeeze to get rid of all water. Blend to a puree. Cook over a medium fire till excess water dries up. Mix with the garlic paste and a little salt and pepper. Divide into flakes. Mash the hardboiled cheeses and mix with salt, pepper and hung curd. Trim the sides of the breads. Take one slice. Spread the spinach paste, top with a little cooked chicken. Cover with a slice of bread. Top this with cheese and curd mixture. Cover with a third slice of bread. Serve wrapped in paper napkins held in place with a tooth pick.

Variation: You may add a little grated cheese or paneer with the spinach.
