Masala Ni Chai

Spiced Tea


1 cup milk

1 cup water

1 tsp tea masala (recipe given below)

3 tsp sugar

1 green cardamom, freshly crushed in its shell

2 tsp tea leaves (strong variety)

A few lemon grass leaves, chopped (optional)


1. In a stainless steel vessel, mix together milk and water, and boil on medium heat. Add tea masala, sugar, cardamom and tea leaves. Allow it to boil till the mixture takes a rich golden colour.

2. Add lemon grass, turn the heat off and cover and let it stand for 5 minutes. Strain in individual teacups and serve hot.

Note: Adjust sugar and tea masala according to your taste.

Makes 2 cups

Tea Masala


Grind together 10 gm each of black pepper, cinnamon, cloves and dried ginger and 40 gm of whole green cardamom in a dry grinder. Process till powdered. Store in an airtight jar.
