Mulligatawny Soup

Curry Flavoured Lentil Soup

INGREDIENTS

1 tbsp butter

2 medium onions, chopped

250 gm bottle gourd

2 cloves garlic

2 medium carrots, chopped

2 tomatoes

4 tbsp red lentils, washed and soaked

4 cups water

1 tsp curry powder

Salt to taste

Pepper to taste

To Serve

Lemon quarters

Steamed rice

METHOD

1. Melt butter in a pan and sauté onions and garlic. Add all vegetables, lentils and four cups of water and cook it in the pressure cooker for four whistles.

2. Let it cool, liquidize and then strain. Return to heat. Add curry powder, salt and pepper and boil until thick. Serve hot with lemon quarters and rice.
