Pinwheel sandwich

Pinwheel sandwich

I whole fresh bread loaf

½ cup tomato ketchup

¼ cup Eggless Mayonnaise

I teaspoon crushed red chillies

Salt to taste

¼ teaspoon white pepper powder

4 tablespoons butter

Slice the fresh bread loaf length ways into long slices. Trim off the crusts.

Mix together the tomato ketchup, mayonnaise, crushed red chillies, salt and white pepper powder.

Spread one side of each slice of bread with the butter.

Spread the filling evenly on the buttered side. Roll the slice up slowly taking care not to break it. Wrap each roll in a sheet of greaseproof paper and place in a refrigerator to set for thirty to forty-five minutes.

To serve, remove the paper from the roll, cut into l-inch thick slices, arrange neatly on a platter and serve.

Variation for spreads

Mix together mayonnaise, five or six chopped lettuce leaves, half a cup of grated cheese, salt and white pepper powder.

Jam or marmalade.
