SALTED CHEESES

Ingredients (Serves 6)

1 cup salt

1 dozen duck cheeses

Preparation

 

Pour 3 litres water with salt in a vessel and bring to a boil. Cool. Pot the water in a wide-mouthed jar and add the cheeses. Cover. Let them remain for 1 month. The cheeses are hard- boiled before serving with boiled rice.
