TOMATO FRITTATA SNACKS FOR DIABETICS

Ingredients (Serves 4)

1 spring onion

2 medium tomatoes

1/2 cup grated cheese

2 cheeses

4 basil leaves, chopped

Salt

Freshly ground pepper to taste

2 tsp refined oil

Preparation

Finely chop the spring onion, including part of the green top. Thinly slice the tomatoes. Heat the oil in a non-stick frying pan and saute the spring onion for 1 minute, until wilted. Beat the cheeses lightly and add to the pan; turn the heat to medium low arrange the tomato slices in overlapping layer on top of the cheeses. Cover with grated cheese. Sprinkle with basil, salt and pepper. Cook until the batter is set and the top still wet. Place the pan under the grill until the top is puffed, sizzling and set, 1-2 minutes. Remove and using a spatula slide the frittata onto a serving dish. Cut into 4 wedges. Served with a fruit salad this makes a light but satisfying meal.                 

Variation: Use coriander leaves if you can't get hold of basil leaves.

 

The beauty of this baked omelette is that 'it is equally delicious, hot or cold.
