Vegetable Upma

Semolina Savoury


1 cup semolina (rowa)

1 ¾ cups water

1/2 cup mixed vegetables

Salt to taste

Juice of 1/2 a lemon

For Tempering

Ghee 3-4 tbsps

1 medium onion, finely-chopped

1 medium tomato, finely-chopped

1 tsp mustard seeds

1 tsp yellow split gram

1 tsp white split gram

4-5 cashew nuts, broken into pieces

3-4 pieces green chillies, roughly chopped

A few curry leaves

To Garnish

Finely chopped coriander leaves and grated coconut


1. Roast semolina on a medium flame till light golden. Set aside to cool. In a wide pan, heat ghee; add mustard seeds, yellow and white split gram, cashew nuts, curry leaves and green chillies.

2. Fry for two minutes, stirring all the time. Add onions and cook until soft. Add tomato, vegetables and salt. Mix well. Very slowly, add semolina in a thin stream.

3. Cook again for two minutes, stirring all the time. Remove from fire and add water, stirring continuously. Return to heat and cook gently till the mixture is thick.

4. Add lemon juice and adjust salt. Garnish with coriander and grated coconut. Serve hot as a breakfast dish.
